Participation to the Worldwide Distilled Spirits Conference (WDSC) in Edinburgh

The distilling commercial and innovation teams attended the Worldwide Distilled Spirits Conference (WDSC) in Edinburgh from 5th to 7th May.

David Cooke and Andy Foulkes had the opportunity to present our latest innovation to the distilling community: the Ion Smoke. 

Developed in conjunction with EBSmoke and our team in Glenesk, this technology cuts peat consumption by up to 40% while preserving the authentic flavour profile of peated whisky. From tradition to transformation: this innovation safeguards peated malt’s heritage and peat stewardship.

Peatlands are among the planet’s most precious natural resources. They take thousands of years to deposit, and Scotland’s natural flora and fauna owe much to the presence of these peat bogs. Peat acts as a critical carbon sink and is one of the most high-profile environmental targets from the Scotch Whisky Association. This long-term project, in conjunction with The Scotch Whisky Research Institute (SWRI) reinforces our expertise in the distilling market.
