Today, Boortmalt is transforming tradition with a patented breakthrough that makes peated malt production more sustainable, efficient, and consistent than ever before: IONSMOKE.

🔥 Traditionally, peated malt relies on burning peat to generate smoke rich in phenolic compounds. During kilning, these compounds are carried through the malt bed and are taken up by the malt, creating the distinctive flavour profile used in peated spirits.

✅ Developed in collaboration with EBSmoke and Boortmalt’s Innovation and site teams, IONSMOKE enhances this process by using electrostatic precipitation (a high-voltage electric field) to charge smoke particulates and promote their deposition onto the malt bed. This innovative approach marks a step change in both efficiency and sustainability, as it helps deliver the same phenolic impact with less peat, reducing associated emissions and supporting peatland conservation.
